“Mogodu,” A Taste of Tradition

One such dish is Mogodu, a beloved delicacy made from tripe, often enjoyed during gatherings and family meals. Mogodu Recipe Ingredients: 1 kg beef tripe, cleaned and cut into pieces 2 large onions, chopped 2-3 cloves garlic, minced 2-3 bay leaves 1 tablespoon paprika 1 tablespoon curry powder 2 tablespoons cooking oil or butter 1 beef stock cube (optional) Salt and pepper, to taste 2-3 carrots, sliced (optional) 2-3 potatoes, peeled and diced (optional) 1-2 tablespoons tomato paste or 1 can of chopped tomatoes (optional) 1-2 tablespoons vinegar or lemon juice (optional) 1-2 cups water or beef broth Instructions: Clean the tripe under cold running water, soak it in vinegar or lemon juice for 30 minutes, rinse well, and cut into pieces. Boil the tripe in a pot of water for 1.5 to 2 hours until tender, then drain. In the same pot, sauté onions and garlic in oil or butter until soft, then add paprika, curry powder, and bay leaves. Add the tripe, optional vegetables, tomato paste or tomatoes, and beef stock cube. Season with salt and pepper. Pour in water or beef broth, bring to a boil, then simmer for 30 minutes to an hour until vegetables are tender. Adjust seasoning and serve hot with pap, dumplings, or rice. You living in ekasi and yes every now and then you eat fancy I mean times have changed and what we eat has also changed no surprise !  But now and then one misses the kind of food that brought us up and one that stands out for me is Kota or Sphatlho or Skhambane as some call it .however over the years how this ekasi treat is prepared has changed . Myself on the other hand I grew up eating panakota and now and then I make it myself at home here is how one would make panakota at home You will need :  Ingredients  1. Bread 🍞 (not sliced bread)2. Peanut butter 3. Atchar4. Polony 5. Cheese 🧀6. Vienna   Instructions  You cut the bread in half then you cut the half in quarter. Then you hallow out the meddle , you apply peanut butter then you put Atchar the you place the Polony , cheese and Vienna then you close the whole thing with that hallowed piece of bread then voila!  And for those that grew up eating normal Kota which is an ekasi vision of a burger then one would need the following : Ingredients  1. Bread 🍞2. Atchar3. Lettuce and cucumber (optional)4. Chips/fries 🍟5. Cheese 🧀6. Polony/beef petty (whichever you prefer)7. Sources of your choice   Instructions  You cut the bread same as above and hallow it same as aboveand if you like you can toast the bread first , you add the Atchar on the bread ,add lettuce and cucumber if you are us , add Polony and cheese then put the chips on top of everything then you add spices and sources for extra flavour the close with the piece you hallowed out.  You can enjoy either meal with a soda drink of your choice or juice if you like.
